Elders Stud Stock Specialist James Matts shares his insights on the burgeoning Australian Wagyu industry.
The Australian Wagyu sector is the leading producer and exporter of Wagyu beef to international high-end markets. According to the Australian Wagyu Association, more than 90 per cent of Australian Wagyu is exported internationally, to a range of premium buyers.
In his role as a Wagyu specialist for Elders, James Matts works closely with clients and buyers to ensure their profitability and success in a fast-growing industry. His role is varied, involving fielding enquiries from both domestic and international clients, monitoring markets and consulting in genetics and breeding.
James, who works extensively with seedstock clients, explained that the seedstock space is still booming, with several new operations commencing procurement in earnest for elite females and genetic packages.
“The science behind breeding in the sector has come a long way in the past decade, with producers recognising that data input is critical for success,” he said.
“Genomic testing and performance recording is evolving rapidly, and while there is still a way to go, the breed is progressing very nicely.
“I’m seeing some huge improvements in feet and legs, rump set, capacity and overall balance. While Wagyu might not be a pretty breed, those who breed them love them, and they do produce excellent results.”
Staying abreast of changes in Wagyu markets is another large part of James’ role. Being well connected to the industry allows him and his team to keep a finger on the pulse, allowing them to make recommendations and implement change proactively.
James explained that the sector is performing strongly, with most domestic and international markets displaying strong ongoing demand for luxury beef.
“The strength of this demand is based on the fact that Wagyu are a very profitable breed, with unique provenance, and an ever-growing market share of the Australian and global beef industry,” James said.
“It’s also due in principle to the luxury tag, along with the actual cattle being high profit, super fertile and easy to handle, which is unparalleled compared to traditional beef operations.”
